Acapulco Mexican Restaurant … Be Sure To Try the Flan
Acapulco Mexican Restaurant is one of several cafes in Soldotna, AK, that serve Mexican food. We like it the best. You’ll find it in a small strip mall on the Sterling Highway. We first went to Soldotna’s Acapulco Mexican restaurant because we had a buy-one-get-one-free coupon from the Northern Lights coupon book. We go back because we like the food. My favorite at the Acapulco Mexican restaurant is the chile verde enchiladas. They generously fill them with chunks of pork and green chile. The pork is tender. The sauce is flavorful. They ladle more of the chile verde sauce over the top of the enchiladas. We went to the Acapulco last night for dinner. They had three specials. One was the chile verde enchiladas. Another was fajitas. The third was chipolte chicken. All of the specials came with beans and rice – and the Acapulco’s homemade flan. The flan deserves special mention. It is real flan. It is not boxed pudding with caramel ice cream topping that some places try to pan off as flan. At the Acapulco, the flan is superb. The custard is smooth. Brown sugar sauce surrounds it. They garnish it with whipped topping. I ordered the chipolte chicken. The waitress described it as chicken in a spicier than usual red sauce, with cream. I received a large plate of sliced grilled chicken breast with mushrooms and onions. It was rich and delicious. Though, I didn’t find it very spicy. It reminded me of a cross between a Mexican dish and German stroganoff. It came with four warm corn tortillas. (I had my choice of corn or flour tortillas.) Bob stuck with the chile verde enchiladas. He likes them so well that I couldn’t get him to try something new. Each table gets a basket of tortilla chips and salsa. The standard salsa is very mild. They will bring you a hotter salsa if you ask for it. Most lunches and dinners at the Acapulco, come with refried beans and rice. You can order a la carte, if you don’t want them. I have yet to order anything at the Acapulco that came smothered in cheese. Like many Mexican restaurants in Alaska, the Acapulco also has Italian food. They have several pasta dishes, calzones, and pizza. They also serve deep fried Alaskan halibut and French fries. The address for the Acapulco Mexican Restaurant is 44758 Sterling Hwy, Soldotna, AK.
